Yesterday we told you about the Mexican Oaxaca cheese and today we bring a simple dish inspired by the famous Choriqueso or sausage and cheese. What we have done is to substitute the sausage for a good Iberian Marinated Pork Tenderloin. The combination is similar but if you feel like you can prepare the sausage, mushrooms, peppers, squash flowers, etc.. the result will be equally great.
Do not forget to accompany it with a cake of wheat or corn, I guarantee you will not have any difficulty and the result is great if you do it with Oaxaca cheese.
Ingredients (2-3 people)
4 or 5 pork steaks marinated Iberian
150 grams of cheese from Oaxaca
One tablespoon of oil
10 Mexican Wheat Pancakes or Corn (preferably small)
Preparation
- Cut the fillets of Iberian pork into small cubes
- Put a clay pot or small sartencilla medium heat and add the tablespoon of oil
- When hot add the diced meat and cook three or four minutes, stirring gently to prevent sticking
- Cut the cheese into small, thin pieces and add to the pan
- Mix with meat and slightly lower fire
- Cover and let cook for about 5 or 10 minutes until cheese is melted and mixed with meat
- Heat the tortillas one minute in the microwave at full power to accompany the casserole
Presentation
Put the casserole on a plate with pancakes hot present.
