I did not want to pass the year without trying again the challenge of raw potato omelette and although I have not gotten the recipe I've finally done something edible and very close to success.
I'm not gonna say it was the first, I might have slowed somewhat in my weekly post due to multiple tests that would for a whole outtakes section as proposed mjolmer. The fact is that I can draw some conclusions that have led me to a step of the final result:
- The potatoes must be sliced very thin like potato chips for churros.
- The height of the tables has to be low, should be a thin omelette. A good trick may be to use a larger pan than usual and let the tortilla spread like a cake (about a finger wide).
- The third trick is the temperature, using a larger pan with bottom heat spreader and temperature at least got the sweet spot that allowed me to onion, potato and egg be made at a time.
Anyway, I hope that you can emulate the results obtained through these features and ye tell us.

The only fault I find is the thickness. I think in the famous restaurant The Tail (Avila) were thicker.
Although this is a minor issue, as it relates to the presentation rather than taste.
