As in the past stay in Zarautz has allowed me to buy cod in one of the best shops I know. Again I bought unsalted for cooking in the day and we have prepared a Duo of Cod with Pil Pil and a recipe similar to the Biscayne but more suitable for kids to do without the chorizo pepper.
As you will see are two recipes in one and I honestly do not know which one to choose when you taste because both are exceptional.
Pil Pil Ingredients (for 4-5 people)
600 g of desalted cod
1/2 head of garlic
1/2 dried red chili
1 cup virgin olive oil
Ingredients for Onion, Garlic and Peppers (for 4-5 people)
600 g of desalted cod
3 or 4 cloves of garlic
1/2 red pepper
6 small green peppers
2 medium onions
6 tablespoons tomato paste naturally
1 sprig of parsley
5 tablespoons olive oil
Salt
Preparing Bacalao al Pil Pil
- Put oil in a casserole and heat
- When the oil is warm lay the sliced garlic and chili thick
- Always avoid burn and get a plate when browned
- Reduce heat and let cool slightly oil
- Put the cod loins with skin side up care that will not stick to the bottom
- Over low heat waiting to be releasing their gelatin and stir to thicken sauces
- When all the gelatin is released about 15-20 minutes, can take the loins and end of linking with the aid of a sieve with which the sauce cone will move if a spoon.
- Re-add the garlic and chilli to the sauce.
- Let stand three or four minutes before serving.

Preparation of Cod with Onions, Garlic and Peppers
- Fry in skillet open green peppers cut in half.
- Set aside to use then cut into strips.
- In the oil fry the onion, red pepper and garlic, pochando simmer for at least 40 minutes.
- Add the parsley and tomatoes and let soften 30 to 40 minutes over low heat.
- Pass the sauce through a blender at low speed or food mill.
- Put the loins with a little extra oil in a casserole.
- Add the sauce when hot and cook about 15 minutes.
- Decorate with strips of green pepper.
- Let stand five minutes before serving.
