The other day I could taste in "Oars" a recipe for cod that aroused my interest when the Maitre was suggested among the dishes she recommended to introduce the letter. Piqued my interest until the point of changing the election was initially taking the salt sea bass for main course. Deliberate choice was well advised by a member of the Blog, in addition to good knowledge of the restaurant, called also the excellent quality of its fish, both as regards their origin and in terms of preparation.
The truth is that to be a recommendation of the Maitre not remember if the dish was in the letter, but if so, I recommend you approach to taste.
As you all know is not chanterelles season, but that was not inconvenient for the dish was delicious. While I prefer fresh, this mushroom as some other holds up well preserved if this is the quality. The sauce was powerful, because in addition to Níscalo much flavor (stronger if retained) was flavored with garlic, tomato and some pepper or something spicy chorizo pepper, but the result was fantastic and if there is a fish that holds this it is certainly the Cod. On another occasion he had had a chance to taste it with Boletus in other restaurants, is also very rich, but perhaps it even more tasty chanterelles.
In short, a highly recommended dish for which I assure you I will look into the recipe, as well as rich, not very common. Therefore will not be easy to find, but well ... perhaps we already have enough information to make an approximation.
Finally I also had chance to try the sea bass in salt, which despite being ration, had great taste and a perfect spot, also highly recommended but completely different from the cod, the simplicity and softness.
