If you have to select a chef who is the greatest exponent of Japanese cuisine in the world, I think without a doubt, that person is Nobu Matsuhisa, known worldwide as Nobu.
Born in Saitama, Japan, his empire has been developed under the philosophy "Cooking is my life" from his first Sushi Bar in Japan to nearly twenty restaurants that is currently open around the world. After Japan opened a bar Shusi Peru, later moving to Argentina, Japan, Alaska and the United States where he currently resides. It has always managed to combine the wisdom of his native cuisine with local ingredients that has been found all over the world giving rise to the so called Nobu style, unique in the world.
As you can see in the picture attached, his gastronomic empire spans several continents, but unfortunately still has no local in Spain, hopefully soon decide to settle in our country, which also find exceptional quality ingredients for your kitchen.

Thanks John, and say it judiciously ;-) Of course we're slow to organize another cenita Japanese home. Today I am just arrived home, I took a few maki and nigiri in Schipol, a regular enough, and I have mono.
I do not know how Nobu Matsuhisa Makis makes crispy Crab with avocado and spicy sauce, but those Jlastras are unsurpassed.
Maybe that's why what Nobu did not dare to open the branch in Madrid ... -)
